The SCA score, or Specialty Coffee Association score, is an evaluation system developed to rate the quality of coffee beans. This method is widely recognized and used by coffee industry professionals worldwide to ensure and maintain high quality standards in specialty coffee. The score is based on a 100-point scale and evaluates various aspects of the coffee bean and the resulting beverage, including:
- Fragrance/Aroma : Evaluates the odors that are released from the coffee when it is ground but has not yet been infused with water, as well as the aromas that are released once the drink is prepared.
- Flavor : Consider the overall flavor impression the coffee leaves on the palate, including the complexity and balance of flavors.
- Aftertaste : Refers to the residual flavor that remains after swallowing the coffee, including its duration and qualities.
- Acidity : Measures the liveliness or brightness of the coffee, which is typically a positive and desirable quality, referring to citrus or fruity notes, not acidity in a negative sense.
- Body : Evaluates the sensation of weight or density of the coffee in the mouth, which can vary from light to creamy or thick.
- Consistency : Considers consistency between sips within a cup of coffee and between different cups.
- Balance : Refers to how the different attributes of coffee combine to create a harmonious drink.
- Cleanliness : Evaluates the purity of the coffee's flavor, without strange flavors or defects.
- Sweetness : Measures the presence of sweet flavors in the coffee, which is indicative of good maturation and processing of the bean.

A specialty coffee must achieve a score of 80 points or more on this scale. The higher the score, the more exceptional the qualities of the coffee are considered.
